Why the totals vary so much
- Price basis. Most Michigan farms price by hanging weight. A few post a flat price or a price per packaged pound.[1] A packaged-weight price looks higher per pound because the bone, fat and moisture are already gone.
- Processing. At most Michigan farms on our list, you pay the processor separately.[1]
- Animal size. Several Michigan farms say a half usually hangs at about 400 lb.[1] A bigger or smaller animal changes the total.
- Cuts. Boneless cuts give you fewer pounds than bone-in cuts from the same carcass.[2]
A worked example (our arithmetic, not a quote)
- A half that hangs at 400 lb, at the $4.63/lb median: 400 × $4.63 = $1,852 to the farm.
- Processing at $0.80/lb hanging, inside the posted range: 400 × $0.80 = $320, plus any flat fee.
- Total: about $2,172 before any flat fee.
- How much beef: MSU Extension estimates a half of an 800 lb carcass yields about 272 lb of mostly bone-in cuts or about 200 lb of boneless, closely trimmed cuts.[2] That works out to about $7.99 per packaged lb bone-in or about $10.86 boneless.
Your farm's price, your processor's rates and your cut choices will change these numbers.
How much freezer space a half needs
MSU Extension's rule of thumb is 1 cubic foot for every 35 to 40 lb of packaged beef.[2] At 200 to 272 lb, a half needs roughly 5 to 8 cubic feet, plus room for large or odd-shaped cuts.[2] See How much freezer space do you need for a quarter cow?
