Why Ohio quotes are hard to compare

The same per-pound number can mean different things. Red Hill Farm's $5.10/lb for a half includes processing.[9] County Line Meats' $5.00/lb doesn't, and its processor charges $450 to $600 for a half on top.[8] Belvedere Farmstead's $9.49/lb also leaves the butcher bill to you: a $130 slaughter fee, $25 hauling and about $0.95/lb.[17] Buckeye Valley Beef Cooperative posts $6.50/lb with processing included, but its page doesn't say which weight that price is based on.[18] Read hanging weight vs. take-home weight before you compare.

Red Hill Farm's numbers show the math: a half averages about 400 lb hanging weight and about 240 lb in your freezer.[9] At $5.10/lb with processing included, that's about $2,040, or about $8.50 per packaged pound (our arithmetic on the farm's numbers, not a farm quote).

Grass-fed often costs more

The highest per-pound prices on the list come from 100% grass-fed farms: Green Vista Farm at $7.50/lb[14], White Clover Farm at $7.75/lb[15], Grass Powered Meats at $8.75/lb[16] and Belvedere Farmstead at $9.49/lb.[17] Grain-finished beef from Koch Farms ($4.25/lb)[5] and Hickory Hollow Farm ($4.50/lb)[6] sits at the low end. It isn't a rule, though: Camigaem Farm, at the low end with $3.95/lb, also says its beef is 100% grass fed.[4]

What else to budget

  • Deposit: from $100 to $1,250 for a half. Green Vista Farm asks $100, refundable up to 30 days before the slaughter date.[14] Grass Powered Meats asks $1,250, non-refundable.[16] Read each farm's terms.
  • Butcher fees: if processing isn't included, budget for it. Little Big Farm says its butcher charges $1 per pound of hanging weight.[12]
  • Freezer space: a half needs about 8 cubic feet.[21] See the freezer space guide.
  • Timing: County Line Meats is typically booked 2 to 3 months ahead[8], and Hickory Hollow Farm 3 to 4 months.[6] White Clover Farm's 2026 dates are sold out.[15]
