Short answer: Illinois farms we checked post $3.75 to $6.99 per lb hanging weight for a half, with a median of $4.50 per lb hanging weight across the 7 farms that post a current per-pound price for a half. Three farms post a price for a half as one figure or a range, from $1,500 to $2,350, and at two of them processing is extra. The farms' own estimates for a half with processing run about $2,200 to $3,600. Your total depends on the animal's size, whether processing is included and how you have it cut.

Hanging weight vs. what you take home
Most Illinois farms that post a per-pound price charge by hanging weight, the weight of the carcass before it's cut. You take home less once bone and trim come off. Little Blue's Farm says a half that hangs 300 lb gives about 195 to 204 lb of packaged beef. Nadig Farms says its typical half hangs about 455 lb and gives about 250 lb. Live-weight, hanging-weight and take-home-weight prices aren't directly comparable. Live weight is the whole animal before slaughter, hanging weight is the carcass before cutting, and you take home less than either. Ask the farm what's included and what processing costs extra.
Is processing included?
Ask before you compare, because it changes the math. Little Blue's Farm is the one Illinois farm that clearly includes processing, in its standard-cut totals. Thirteen farms have you pay for processing separately, including Meadow Haven Farm, Spivey Cattle Company, Hidden Forest Farm, Gallagher Farms, Graff Champion Beef and Irish Grove Farms. Where farms post a per-pound processing rate, it's about $0.80 to $1.20 per lb hanging weight (Pasture Grazed, Funk Farms Premium Beef, Gallagher Farms and Brass Family Farm), and Little Blue's Farm lists $1.90. Farms that post a flat figure for a half put it at $250 to $550.
Grass-finished vs. grain-finished
Finish doesn't set the price on its own. Meadow Haven Farm sells 100% grass-fed and finished beef at $3.75 per lb hanging weight for a half, the lowest half rate on the list, and Little Blue's Farm charges the same $6.99 per lb hanging weight whether you choose grass-fed or grain-finished. Besides Little Blue's, four farms say their beef is grass-finished (Meadow Haven Farm, Irish Grove Farms, Brass Family Farm and Arnold's Farm) and seven say grain-finished (Pasture Grazed, Fifty Four Farms, Gallagher Farms, Nadig Farms, Spivey Cattle Company, Sumner Point Beef and Willow City Farm).
Budget for these too
- Deposit: Illinois farms that post a deposit for a half ask $100 to $500 (Spivey Cattle Company asks $100; Graff Champion Beef, Fifty Four Farms, Toohill Seed & Beef Service and Willow City Farm ask $500). Spivey Cattle Company says its deposit is non-refundable, and Nadig Farms says its deposit can't be refunded once the animal is scheduled for processing, so read the terms.
- Processing: if it isn't included, budget for it. Graff Champion Beef puts processing for a half at about $550, and Nadig Farms at about $400.
- Freezer space: a half needs about 8 to 10 cubic feet. See our freezer space guide.
- Timing: Spivey Cattle Company is taking deposits for its Nov. 27 butcher date, Brass Family Farm lists butcher dates from late October to mid-November 2026, Sumner Point Beef is booking for mid-January, and Nadig Farms is booking halves for February 3, 2027. Pasture Grazed and Irish Grove Farms show 2026 as sold out.
