Short answer: Missouri farms we checked post $4.00 to $8.00 per lb hanging weight for a half, with a median of $5.50 per lb hanging weight across the 8 farms that post a per-pound hanging-weight price for a half. Farms that sell a half at one set price ask $1,800 to $2,750, and the farms' own estimates for a half run about $1,900 to $3,000. Your total depends on the animal's size, whether processing is included and how you have it cut. Some farms, like Sunny Ridge Farms and Hopewell Farms Angus, let you choose your cuts.

Hanging weight vs. what you take home

Most Missouri farms that post a per-pound price charge by hanging weight, the weight of the carcass before it's cut. You take home less once bone and trim come off. Weller Beef says its average half hangs about 425 lb and gives about 225 lb of packaged beef. Hosman Cattle Co says its average half hangs about 420 lb and yields about 225 to 250 lb. Live-weight, hanging-weight and take-home-weight prices aren't directly comparable. Live weight is the whole animal before slaughter, hanging weight is the carcass before cutting, and you take home less than either. Ask the farm what's included and what processing costs extra.

Is processing included?

Ask before you compare, because it changes the math. Eight farms say processing is in their price: 2M Beef, Middleton's All Natural Meats, Crooked Creek Beef, KC Farm Stand, Clearwater Angus, Cope Grass Farm, Kansas City Grass-Fed Beef and White Angus Ranch. Eight have you pay the processor separately: Hosman Cattle Co, Red Barn Ranch, Show Me Pastures, Heartland Beef Co, Hopewell Farms Angus, Peace Valley Poultry, Price Family Farms and Circle F Cattle (for custom shares). Where farms post a processing rate, it's about $0.85 to $1.25 per lb hanging weight, and Peace Valley Poultry adds a kill fee per half.

Grass-finished vs. grain-finished

Batchelder Family Farms prices both, which makes for a clean comparison: $8.00 per lb hanging weight grass-finished against $6.50 for grass-fed, grain-finished beef. Five other farms say their beef is grain-finished (Hopewell Farms Angus, Heartland Beef Co, Clearwater Angus, Circle F Cattle and Freddie Wieder Farms), and five describe theirs as grass-fed or grass-finished (Cox Family Farm, Cope Grass Farm, Kansas City Grass-Fed Beef, KC Farm Stand and White Angus Ranch). Cox Family Farm sells a 100% grass-finished half for $2,750.

Budget for these too

  • Deposit: Missouri farms that post a deposit for a half ask $100 to $600 (Weller Beef asks $100; Sunny Ridge Farms asks $600). 2M Beef, Batchelder Family Farms, Circle F Cattle and Weller Beef say their deposit is non-refundable, so read the terms.
  • Processing: if it isn't included, budget for it. Circle F Cattle puts processing for a custom half at about $250 to $270, and Hosman Cattle Co puts it at about $525 for an average half.
  • Freezer space: a half needs about 8 to 10 cubic feet. See our freezer space guide.
  • Timing: 2M Beef is taking orders for November 2026 processing and Weller Beef for December or January delivery. Hosman Cattle Co, Circle F Cattle, KC Farm Stand, Kansas City Grass-Fed Beef and White Angus Ranch show their current shares as sold out.
